- 3 cups of chicken stock
- 1 cup quinoa
- 1 cup cherry tomatoes
- 1 cucumber
- 12 cups of romaine lettuce
- 1 cup of Feta Cheese
- Bring stock and quinoa to bubble in pot on high warmth; stew on medium-low warmth 15 min. or on the other hand until fluid is assimilated. Cool.
- Join tomatoes, cucumbers and onions in medium bowl. Include 1/4 cup dressing; blend softly.
- Spread platter with lettuce; top with quinoa, vegetable blend and cheddar. Sprinkle with residual dressing.
